Year-Round Passover Cake

Cake! It is actually a Passover brownie recipe, but seems like cake to me.

  • 4 Eggs (at room temperature preferred but not required)
  • 2 Cups Sugar
  • 1 Cup EV Olive Oil
  • 1/2 Teaspoon Salt (if you use chunky kosher/sea/canning salt make sure to grind it down)
  • 1 Cup Potato Starch
  • 3/4 Cup Cocoa Powder (optional but must compensate)
  • 1/2 Cup Chocolate Chips (optional)

Process: Mix it up well, liquids & salt first. Sifting the potato starch won’t hurt. Chocolate chips last.
11″x17″ Pan @350 for 35-45 Minutes (depending on pan size and thickness – don’t be afraid to add time)
Cool before serving (Like that ever happens!)
